Konig Torch. and damnit, now that I looked again, the offsets for the 19" wheels are too weak (+45) for my car. The 18s have +15 but I need bigger (for G35)

Yeah, I'm the same way.

I think as soon as I get the torque dip taken care of and add a little power I'll be done. I am however getting a quick ride in a S/C 86 in the near future (I already fear for my wallet's safety)

Offset is essentially how far off center the wheel sits from the hub. 0 offset is absolute center of the wheel (on the hub) while positive offset brings the hub closer to the outside of the wheel. Negative offset is towards the inside, so deep dish wheels will be high negative offsets. This isn't as simple as it sounds, though, because this is obviously affected by wheel width. There are offset calculators that are absolutely necessary if you're doing this for the first time. Input your current wheel size and offset, and enter your new wheel size and offset, and it will tell you what the change will be
